Six Questions with Graz Mulcahy, Anyday’s Creative Director of Music

If you’ve ever paused mid-bite at one of our venues to ask what song was playing, chances are you have heard Graz Mulcahy’s work. As Creative Director of Music, he is the ear behind our playlists. With over two decades specialising in captivating audio, visual and tactile experiences, Graz’s creative journey began in a small Australian town, shaped by graffiti culture and an obsession with music. His career has included collaborations with global brands like Kartell, Oliver Peoples, Brain Dead and solo piano performances at the Guggenheim.

We asked Graz six quick questions to find out what makes a playlist sing, how he handles a creative block and which song fills up the dance floor every single time.

 

1. What do you think is the key to a good restaurant playlist?

A good restaurant playlist is like seasoning—you shouldn’t really notice it unless it’s missing or totally off. It should feel like the music is flirting with you from across the room, not shouting in your ear. The sweet spot is somewhere between "I could dance to this" and "I could cry into my pasta about this." Bonus points if there's a moment where a song makes someone Shazam under the table.

2. If you could collaborate with any artist to create an Anyday-exclusive mixtape, who would be on the lineup?

Maybe someone like Chromeo to replay and give a twist to some of the Anyday hits. Like having an Anyday house band!

3. You have recently moved to Las Vegas. How is the music scene there?

It’s basically one giant, glittering jukebox—always something familiar, loud and crowd-pleasing. You’re never too far from a greatest hit or a singalong moment. It leans more toward spectacle than subculture, so if you’re hunting for the underground, you’ve gotta dig a little deeper—but it’s there, pulsing in the corners. Whether it’s The Eagles headlining a massive arena or Kraftwerk in a sea of lasers, there’s always something happening.

4. What is the best advice you have ever received?

“Don’t trust anyone who says they ‘don’t really like music.’” But real advice? A mentor once told me: “If you’re stuck, make it worse on purpose.” That idea of breaking it apart so you can rebuild it with more character has saved more than one project—and at least one haircut.

5. You work across a range of different creative projects, what is your routine if you hit a creative slump?

I do something completely unrelated—like organizing my spice rack alphabetically or trying to learn a new language. The point is to trick my brain into loosening its grip on the outcome. Best case, I accidentally solve the creative problem while my brain is leaking out my ears from trying to learn Chinese.

6. If you had to pick one song to get everyone up and dancing, what is it?

Aretha Franklin’s R.E.S.P.E.C.T. Is the ultimate handbag dropper.
